Originally, I wanted to make this video about all the ways to use up pesto. I ended up swapping it over to curry paste because I think its suggested uses are far more novel. You can do most of these things with pesto as well, and you could even bake it into bread. I also considered making this a series in which I talked about all the ways to use those sort of always-on-hand ~flavor bombs~ ... but they'd all be almost the exact same suggestions as this video. Even the "mortar and pestle or food processor" question applies to both!

This is the red curry paste recipe I followed most recently: https://www.thaitable.com/thai/recipe/red-curry-paste

I could be wrong, but I feel like green curry paste is slightly easier to make at home.

Whenever you talk about or look for curry paste ingredients, you eventually come across a name for a type of lime that's also a wildly offensive slur. The first time I heard a hint of this conversation years ago, I'll admit that my initial reaction was something like "oh great now there's a woke word for a type of lime", but after looking into it for like.... five seconds, it becomes shockingly apparent that it's not an overreaction. It'd be like if we had a type of apple called "n-word-apple"— You'd could debate the etymology or the intentions, or you could just be a reasonable dude and call it something else. Anyway, this isn't meant to lecture you and I don't think it's fair to be a jerk about correcting someone who had no idea, but I think it's a good thing to bring up whenever appropriate so that the "how could I have known it was bad if everybody already says it?" argument slowly fades out.
