In this video you can see the process of grayscale coloring. A few words about how I do it:

•  I make grayscale shadows. I usually use standart round brush and blur the border of light and shadow where needed.
• Flat colors. I use color correction to make whites and blacks more grey (reduce contrast). This will make the colors more natural.
• I use overlay blend mode (on the grayscale layer) to combine colors and shadows. If you see your character have too dark shadows or very bright lights you can choose your grayscale layer and use the "levels" on photoshop to adjust the tone.
