Do you know the Polish delicacy called "Pork Chop"? I'm asking because I'm currently beating the meat into cutlets. It is pork meat, located along the pig's spine - fried, preferably in lard, in breadcrumbs. However, when I beat the cutlets, as you can see, my "hams" shake - I would even say that they are very big, meaty hams. I wish you all bon appetit.
